Beef & Beetroot Bao Buns by Mike

1 pkt Green Meadows Beef and Beetroot Burger patties
6-8 Bao Buns
1/2 small savoy cabbage, core removed
1 red onion, peeled
2 carrots, peeled
1/4 telegraph cucumber
1 cup coriander, chopped
4 tbsp mayonnaise
1/2 tsp chipotle powder
1 tbsp liquid honey
Juice of 1 lemon
Pinch of salt
2 tbsp oil
Garnish of baby greens
To prepare the slaw, finely slice the cabbage, onions, carrots and cucumbers. Toss in a large bowl along with the chopped coriander.
In another small bowl, combine the mayonnaise, chipotle powder, honey and lemon juice. Add a small pinch of salt. Mix well.
Add half the mayonnaise to the slaw and combine, set the rest aside.
Pre-heat a fry pan and lightly oil the beef patties before quickly frying on each side for 3 minutes. Remove and allow to rest.
Place the bao buns into a damp tea towel and then into the microwave on high for 2 minutes. Carefully check after this time and keep warm in the tea towel till required. They should be soft all the way through.
When ready, remove the bao buns and start filling with a tsp of chipotle mayo, then the patty, slaw and garnish withsome baby herbs.
Eat as quickly as you can (well you'll want to anyway!)
