Ingredients:
Beef Tortillas
- 500g Premium Beef Mince
- ½ small brown onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon lemon zest
- 4 tablespoons finely grated parmesan cheese
- 12-15 small tortillas
- 2 tablespoons olive oil
- ½ small red onion, thinly sliced
- 1 x punnet cherry tomatoes, quartered
- ½ cucumber, halved, thinly sliced
- 75g feta cheese, crumbled
- Good handful of mint leaves to serve
- Good handful of roughly chopped parsley to serve
Mint Yoghurt
- 3/4 cup Greek yoghurt
- 1 clove garlic, minced
- ¼ teaspoon sea salt
- 1 teaspoon lemon zest
- 2 tablespoons finely chopped mint leaves
Method:
Put the mince, onion, garlic, lemon zest and parmesan cheese into a bowl, season with sea salt and freshly ground black pepper and mix well to combine (mixing with clean hands can sometimes be easier here).
Roll the mixture into balls a little bigger than a golf ball. Take a ball of the mince and press it out across the tortilla, right to the edges.Pre-heat a heavy-bottomed frying pan over a medium-high heat. Drizzle in the olive oil and once hot, put the tortilla onto the pan, mince-side-down and cook for a minute or two, or until the meat is browned. Flip, then cook for a further minute before removing from the pan. Keep warm in a warm oven and repeat with the remaining tortillas and mince.
Mix the yoghurt, garlic, sea salt, lemon zest and mint and put into a small serving bowl.
Pile the tortillas onto a serving plate.
Put the red onion, tomatoes, cucumber, herbs and feta onto a platter and put these in the centre of the table along with the yoghurt and let your guests build their own tortillas.
