The Perfect Steak with Sauteed Mushrooms

Ingredients

4 x thick cut sirloin steak
salt and pepper
Olive oil
Butter
500gms mixed mushrooms
1 tablespoon chopped parsley
cooks string

Method:

Preheat oven to 200°C.

Tie your steaks tightly around the middle with cooks’ string so that they hold their shape. If possible, refrigerate over night. Remove steaks from fridge at least an hour before cooking to bring to room temperature (providing you don’t live in a sauna).

Bring a frying pan to high heat and brush your steaks with a dash of oil. Season with pepper only and sear steaks on each side for:

  • 2 minutes - rare
  • 3 minutes - medium rare
  • 4 minutes - medium
  • 5-6 minutes - well done
Remove from pan straight into a warmed baking dish and place in the oven for 4-5 minutes.

Remove from the oven, cover loosely with aluminium foil and let the meat ‘rest’ for 5 minutes. This process is crucial as it lets meat fibres relax. Once rested, cut off the cooks’ string.

Meanwhile fry mushrooms in a teaspoon of oil and teaspoon of butter until all moisture has been removed – mushrooms have large water content and you want to remove all of this to get a beautiful concentrated mushroom flavour. On a high heat this takes about 10 minutes. Season to taste.

Top the steaks with mushrooms and serve with your favourite side dishes.
