Sausage Sandwiches with Garlic Chili Mayo and Caramelised Onions

Ingredients

 

  • 2 tablespoons olive oil
  • 30g butter
  • 3 onions, halved, sliced
  • ½ cup mayonnaise
  • 1 clove garlic, minced
  • 2 tablespoons Sriracha sauce (or yourfavourite hot sauce, to taste)
  • 6 Green Meadows Beef Sausages
  • 6 slices bread (we used white sourdough)
  • Sliced cheese
  • Micro greens (or your favourite salad greens)


Method:

In a heavy-bottomed frying pan, over a medium-high heat, melt together the olive oil and the butter. Once hot, add the onion and cook for 15-20 minutes, or until beginning to catch on the bottom of the pan and caramelise. Remove from the pan and set aside.

In a small bowl, mix the mayonnaise, garlic, Sriracha sauce and a pinch of sea salt.
Cook the sausages on a BBQ (or in a heavy-bottomed frying pan if you don't have a BBQ) until golden brown and just cooked through.

Remove from the heat and slice each sausage into three on the diagonal.

Return to the BBQ (or frying pan) and cook, turning until each side is golden brown.


To Serve

To assemble, spread a generous layer of the garlic and chilli mayo over each slice of bread, add cheese, the onions and then three pieces of sausage. Lastly garnish with the micro greens.
