Double Angus Beef Brisket and Chuck Burgers with Fries

Ingredients:

  • 1 red onion, thickly sliced
  • 2 tablespoons red wine vinegar
  • 800g roasting potatoes
  • 2 tablespoons olive oil
  • 1 large knob butter
  • 1 x packet Angus Beef Brisket and Chuck Burger patties
  • Lettuce
  • Tomato, sliced
  • 8 cheese slices
  • Mayonnaise

Method:

Put the onion rings into a bowl and drizzle over the vinegar and mix well. Leave for an hour or so.

Pre-heat the oven to 200°C.
 
Cut the potatoes into chips (roughly a finger thick) then put into a baking dish. Drizzle over the olive oil then throw in the knob of butter and place into the oven and bake for 1 hour or until golden brown and crunchy. Flip/shake the chips around as they cook to ensure even crunchiness. Serve alongside the burger.

To make the burger cook the patties as per the packet instructions. Arrange the lettuce on the bottom of the buns. Next layer on the tomato, followed by the pickled onion then the first pattie. Top this with the first cheese slice followed by another pattie and the second cheese slice. Top with mayonnaise or burger sauce and the lid of the bun and serve with the chips.
