Celebrating Taranaki Anniversary with a special Carey favourite

Ingredients:


Dough
  • 1 ½ cups flour 
  • 1 ½ teaspoons baking powder 
  • 1 tablespoon butter 
  • ½ cup + 2 tablespoons milk 

Syrup 

  • 1 cup water 
  • ¼ cup sugar 
  • 1 tablespoon golden syrup (maple syrup is fine too or just leave it out) 
  • 55g butter 

Method:

Grease a pudding basin with butter. Put the flour, baking powder, butter and milk into a bowl and mix until it comes together. Form into a ball (add a little extra milk if necessary) and press into the bottom of the pudding basin.  

Put the water, sugar, golden syrup and butter into a small saucepan and heat until the sugar has dissolved. Pour this over the dough, put the lid on the basin and then put the basin into a large pot with a lid. Pour water carefully down the side of the pot until it is half to three quarters the way up the side of the pot. Put on the lid, bring to the boil then reduce to a simmer and cook for 30 minutes or until a skewer inserted into the pudding comes out clean. 


To serve:

Serve immediately with runny or whipped cream.
