Angus Beef and Bean Tortillas

Ingredients:

Beef + Bean Torillas

  • 2 tablespoons olive oil
  • 1 onion
  • 4 cloves garlic
  • 500g  Green Meadows Premium Angus Minced Beef
  • 1 tin tomatoes
  • 1 tin  red kidney beans , drained, rinsed
  • 1/3 cup tomato paste
  • 2 teaspoons oregano
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon sugar
  • 25g dark chocolate (85% cocoa), broken into pieces
Tamarillo Salsa
  • 3 tamarillos
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • ½ cup coriander, roughly chopped
  • ½ medium/small red onion, quartered, finely sliced
 
Chunky Guacamole
  • 2 avocados
  • ½ medium/small red onion, finely chopped
  • 25 cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
To Serve
  • Packet of Farrah’s tortillas
  • Sour cream

Method:

Beef & Bean Tortillas


Heat the olive oil in a heavy-bottomed pot with a lid over a medium-high heat. Fry the onion and the garlic until soft and translucent. Add the mince to the pot and fry until cooked, before adding in all the remaining ingredients aside from the chocolate. Bring to the boil, reduce the heat and put on the lid. Allow to simmer and cook for 45 minutes. Remove the lid and continue to cook until the liquid evaporates and the mixture thickens. Stir in the dark chocolate before serving.
 
Tamarillo Salsa


Score the bottoms of the tamarillos in a cross using a sharp knife. Bring a small saucepan of water to the boil, drop in the tamarillos and blanch for 1 minute. Remove from the heat, drain and run under cold water to cool. Peel the skins from the tamarillos and discard before finely dicing the fruit and putting into a small bowl. Add the lime juice, olive oil, coriander, and the red onion. Season with sea salt to taste.

 

 
Chunky Guacamole


Cut the avocados into chunks and put into a small bowl. Mash gently with a fork so that you still retain chunks of avocado. Add in the red onion, tomatoes, lime juice and olive oil, season with sea salt to taste and mix well.
 
To Serve


Serve the Beef & Bean mixture with the salsa, guacamole, tortillas, and sour cream and let everyone assemble their own tortillas as they please!
